Dill Pickle Relish
The following recipe can be used immediately or for canning.

Dill Pickle Relish

Ingredients
- 4 cups chopped and seeded cucumbers
- 1 cup diced green pepper
- 1/2 cup diced red pepper
- 3 cups diced onion
- 2 cups diced celery
- 1/4 cup salt
- 2 1/2 cups sugar
- 1 cup white vinegar
- 1 cup apple cider vinegar
- 1 tbsp celery seed
- 1 tbsp mustard seed
Instructions
- Combine all vegetables in a large bowl. Sprinkle with salt. Cover with cold water and let stand 4 hours. Drain completely in a colander.
- Combine sugar, vinegars, celery seed and mustard seed in a large dutch oven. Bring to a boil and stir until sugar is dissolved.
- Stir in drained vegetables and simmer 10 minutes.
- Pack into warm canning jars leaving 1/2 inch headspace. Process in boiling water bath for 10 minutes.
