Dill Pickle Relish

The following recipe can be used immediately or for canning.

Dill Pickle Relish

Ingredients

  • 4 cups chopped and seeded cucumbers
  • 1 cup diced green pepper
  • 1/2 cup diced red pepper
  • 3 cups diced onion
  • 2 cups diced celery
  • 1/4 cup salt
  • 2 1/2 cups sugar
  • 1 cup white vinegar
  • 1 cup apple cider vinegar
  • 1 tbsp celery seed
  • 1 tbsp mustard seed

Instructions

  1. Combine all vegetables in a large bowl. Sprinkle with salt. Cover with cold water and let stand 4 hours. Drain completely in a colander.
  2. Combine sugar, vinegars, celery seed and mustard seed in a large dutch oven. Bring to a boil and stir until sugar is dissolved.
  3. Stir in drained vegetables and simmer 10 minutes.
  4. Pack into warm canning jars leaving 1/2 inch headspace. Process in boiling water bath for 10 minutes.
