Red Tomato Salsa

INGREDIENTS

  • 2 lbs ripe tomatoes, chopped

  • 1 medium onion, finely chopped

  • 4 garlic cloves, minced

  • 2 jalapeños, seeded and minced

  • 1 tsp sea salt

  • 1/2 tsp fresh ground pepper

  • 1/2 tsp cumin

  • 1/2 cup fresh lime juice

  • fresh cilantro, chopped (optional)

INSTRUCTIONS

  1. Chop and mince all the ingredients and add to a large bowl.

  2. Stir in the salt, pepper, cumin, cilantro (if using) and lime juice. Adjust spices as needed for taste.

  3. Cover and chill until ready to use.
