Red Tomato Salsa

INGREDIENTS
2 lbs ripe tomatoes, chopped
1 medium onion, finely chopped
4 garlic cloves, minced
2 jalapeños, seeded and minced
1 tsp sea salt
1/2 tsp fresh ground pepper
1/2 tsp cumin
1/2 cup fresh lime juice
fresh cilantro, chopped (optional)
INSTRUCTIONS
Chop and mince all the ingredients and add to a large bowl.
Stir in the salt, pepper, cumin, cilantro (if using) and lime juice. Adjust spices as needed for taste.
Cover and chill until ready to use.
