Apple Pie

Ingredients
Pie Pastry
- 3 cups all-purpose flour
- 3/4 cup cold butter, sliced
- 6 tbsp cold vegetable shortening, sliced
- 1 tsp Kosher salt
- 4-6 tbsp ice-cold water (may need a little more or less)
- 1 large egg
Pie Filling
- 1/2 cup salted butter
- 3 tbsp all-purpose flour
- 1/4 cup water
- 1/2 cup white sugar
- 1/2 cup brown sugar, packed
- 8-10 medium Granny Smith apples - peeled, cored and sliced
Instructions
Prepare Pie Pastry
- Process first 4 ingredients in a food processor until mixture resembles coarse meal.
- With processor running, gradually add 4 tbsp ice-cold water (1 tbsp at a time) and process until dough forms a ball and pulls away from sides of bowl. Add more ice-cold water - 1 tbsp at a time - if necessary.
- Divide dough in half and flatten each half into a disk. Wrap each disk in plastic wrap and chill for at least 2 hours or up to 2 days. Egg will be used later.
- When ready to use, unwrap 1 dough disk and place on a lightly floured surface. Sprinkle with flour. Ross dough to 1/8 inch thick. Fit dough into greased (with butter) 9 inch deep-dish pie plate.
- Repeat rolling procedure with remaining dough disk. Cut this disk into 12 to 14 (1/2 inch wide) strips.
Prepare Pie Filling
- Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce heat and simmer.
- Fill pie plate with apples, mounded slightly in center.
- Gently pour the sugar and butter liquid over the pie.
Finish Pie
- Arrange piecrust strips in a lattice design over pie, overlapping the edge.
- Crimp the edges completely around outside of pie.
- Whisk together the egg and 1 tbsp of water. Brush the entire pie (including edges) with egg mixture.
- Preheat oven to 435 degrees F. Place pie on baking sheet and bake 15 minutes.
- Reduce oven temperature to 350 degrees F and continue baking for 35 to 45 minutes, until crust is golden and filling bubbles in center.
- Let pie cool at least 1 hour before serving.
