Roasted Bell Peppers

Ingredients
- Organic red, yellow, green or orange bell peppers
- Olive oil (oven method only)
Instructions
Option 1: Gas Stove Top Method
- Place a cooking grill over a gas burner and turn the burner on to medium-high.
- Arrange peppers directly on the cooking grill.
- Turning frequently, roast peppers until all sides (and bottom) are completely charred.
- Remove peppers from grill and place in a glass or stainless steel bowl. Cover the bowl with a lid or plate and let the peppers steam for about 15-20 minutes.
- Carefully take out the peppers from the bowl. Remove the seeds and stems, then peel the skin from the peppers. It's okay if some charred bits remain on the peppers. This just adds flavor!
Option 2: Oven Method
- Position oven rack in top third of oven and preheat oven to 400 degrees Fahrenheit.
- Line a baking sheet with parchment paper.
- Slice each bell pepper in half lengthwise. Remove stems and seeds.
- Place sliced bell peppers onto parchment paper cut side down.
- Lightly brush tops of peppers with olive oil.
- Roast in oven for approximately 20 minutes. Rotate pan and continue roasting for an additional 20 minutes. Pepper skins should look blistered and wrinkled.
- Remove peppers from oven and place in a glass or stainless steel bowl. Cover the bowl with a lid or plate and let the peppers steam for about 15-20 minutes.
- Carefully take out the peppers from the bowl. Remove the seeds and stems, then peel the skin from the peppers.
