Dill Pickle Relish

INGREDIENTS
4 cups chopped and seeded cucumbers
1 cup diced green pepper
1/2 cup diced red pepper
3 cups diced onion
2 cups diced celery
1/4 cup salt
2 1/2 cups sugar
1 cup white vinegar
1 cup apple cider vinegar
1 tbsp celery seed
1 tbsp mustard seed
INSTRUCTIONS
Combine all vegetables in a large bowl. Sprinkle with salt. Cover with cold water and let stand 4 hours. Drain completely in a colander.
Combine sugar, vinegars, celery seed and mustard seed in a large dutch oven. Bring to a boil and stir until sugar is dissolved.
Stir in drained vegetables and simmer 10 minutes.
Pack into warm canning jars leaving 1/2 inch headspace. Process in boiling water bath for 10 minutes.
