For a 2 crust pie, don't cut the second pastry into strips. After adding the filling to the prepared pie pastry, gently place the second rolled out pastry over the filled pie. Cut any overhanging pieces to about 1 inch beyond the edge, fold under and flute together with the pastry that was already in the pie plate.
